The Life Science Department of Kristu Jayanti College had organized an industrial visit for the final year UG and PG students on 23th of September 2016. As with any other industrial visit, the major aim of this visit was also to give the students an insight into the practical aspects of what they would have come across theoretically and to see them as to how it is all done on a massive scale which proved to be a befitting experience for the students.
The students were accompanied by three faculty members from the department during the visit namely- Dr.Challaraj Emmanuel, Dr.Sonia Angeline and Ms. Apoorva.
KODAI DAIRY PRODUCTS-
This was the first industry to be visited. As is evident from the name it is a cheese industry located in Uchapatty, Old batlagundu, Tamil nadu. The owner of the industry- Mr.Hari Shankar was kind enough to take some time out of his busy schedule to talk the students through the world of cheese production.
He stated that for four decades the “Kodai Cheese” brand has been popular for its special range and nutritious value. What started from a rural village as a family owned dairy with six suppliers in 1972 has grown in magnitude manufacturing150 metric tonnes of cheese every year. In the beginning horse drawn wagon collected 50 litres of milk per day, today 4,000 litres of milk goes into the making of Cheddar, Mozzarella, Ricotta, the Blue cheese and the latest handmade Cambrie. The entire line is made with fresh antibiotic free milk, experience and from authentic recipes in eco friendly way. The whey created in the cheese making process is used for making organic compost for the entire vegetation, fodder, flowers, fruit and other trees grown on their property. The industry now has tie-ups with Taj Hotel, Dominos, ITC and British Airways. He also let the students gain access to the milk treatment and pasteurization area, storage room and the farm. Towards the end of the visit, the students were offered some farm made cheese and wine as a token of appreciation from the producer’s end.
